After two years of experience in Querétaro and 6 editions in that entity, the platform arrives in Mexico City Michelin Chef Meets Mexico to disseminate the gastronomic part of our country and bring gastronomic trends to the world, through the participation of renowned chefs with the Michelin star, explained Rodrigo Velazquezconcept leader.
The first appointment that has been scheduled under the Michelin Chef Meets Mexico concept for April 22, Earth dayin Xochimilco “will have the participation of the green star chef, Borja Marrerofrom the restaurant muxgo; and the traditional cook and member of the Observatory of Mexican Gastronomic Culture, angeles romerowho will share their knowledge hand in hand that will take place in the natural setting”, said Velázquez, at a press conference, where he explained that for the 2023 activities agenda the concept “will always have the participation of a recognized chef with Michelin star, a Mexican chef and a traditional cook”.
In addition, he commented that the first edition of Michelin Chef Meets Mexico “will have as its cause to support the sustainable economy of the chinampera zone in Xochimilco, since each of the events that have been scheduled on this year’s agenda will have a cause and a social purpose”.
And for “our first edition in Mexico City we want to show and promote everything that happens in the chinampera zone of Xochimilco with the products they have. The idea is to support agricultural producers and bring the green market (integrated with all its products, such as purslane, lettuce, quelites, tomatoes, pumpkins, etc.) to the center of the City.”
He even announced that the menu that will be served for the event with “the one we will celebrate Earth Day will be created with products from the Xochimilco chinampera area.”
During the presentation of the Platform in the restaurant Phonic, Velázquez, where the traditional cook, Ángeles Romero, was present; she referred to the events they have scheduled for this year.
“In June we will have an appointment at the Autodromo with two chefs with Michelin stars, 4 restaurants and a traditional smoke cook from Oaxaca, Charito,” he commented.
“In summer we will also have an event in Los Cabos,” he said and later referred to the appointment that has been scheduled in Polanco “With 3 hotels, 3 days and a well-known chef.”
For that date it has been decided to adopt as a cause “the fight against breast cancer that takes place in pink October”, so the help will be through a foundation that works in this work.
And to close the year they plan “a tribute to Spain with the collaboration of the Spanish embassy and the creation of a very traditional menu and a very careful pairing”.
- For each of the appointments there will be selected wine labels for the pairings; as well as some proposals for Ron de cane.
- In the presentation of the platform, in addition to serving some proposals from the traditional cook Ángeles Romero, such as tlacoyos, vegetable tacos and esquites.
- Tequila Patrón offered a tasting at the Fonico de Víctor Garibay restaurant, where some of the gastronomic proposals that are cooked with products from the Xochimilco chinampas were served.
